Food Fanatic Friday...and other stuff!
- McKenna was sick for over 2 week with a sinus infection, other issues you may not want to know about, and pink eye.
- McKenna has made 3 doctors visits in the last 2 weeks.
- Macy became ill with bronchitis, but with the help of antibiotics, it only lasted 1 week.
- Jeremy missed 2 days of work due to his eyes getting almost swollen shut from pink eye. He made 2 doctors visits in the last week. He is now on antibiotics from a sinus infection, and eye drops for pink eye.
- I also got pink eye in both eyes, but I am not a doctor kind of person, so I just used Jeremy's eye drops. It has been a week now, and it is finally clearing up!
- My mom came to town last Wednesday, and we cherished our time together before she left Saturday morning to return to Florida. My dad joined her on Friday afternoon, and we all headed out for our "last supper" before their journey.
- My brother, who I have discovered is a fabulous actor, is currently performing in his first show. It is called Wit, and you can still see the show this weekend for its final viewing, in Indianapolis. We went on Friday night.
- Last Saturday, with all of us feeling a little under the weather, we headed anyway to Macy's FIRST ballet class. She was stunning!!!!
Good news is, we are ALL feeling better now!!!! We have friends coming over Saturday night for a BBQ, and are so excited for Fall to finally arrive.
Since Fall is my FAVORITE season of the year, I have decided to give you a recipe of my all time favorite Fall recipe. I am sure you all have your own recipes for this dessert, but just give this one a try. It's not only easy, but the topping is FABULOUS!!!!!
Apple Crisp (or peach crisp)
In an 8 x 8 pan, layer your peeled and sliced apples (or peaches)
In a bowl, mix:
1 cup flour
1 1/2 cup sugar
3/4 t salt
1 t baking powder
Cut in: 1 egg, to make a crumb topping
Melt 1/3 cup butter, and drizzle over the topping
*Sprinkle with cinnamon
Bake at 350" 30-40 min. Enjoy!

McKenna's 26 ABCs!

If you have been following me for a while, you will remember our posts about our ABCs. Well, I just realized McKenna has never got to post about her ABCs.
So I asked her if she wanted to be a part of this, and she shook her head "no", but in in end she fell victim to my peer pressure.
A - Age: Mommy says I am 9 mo., but my body says I'm 1 already, my mind says I'm 3, and my heart says I'm a lover!
B - Bed size: I sleep in this thing called a crib, but I have a few nicknames for it...."The Cage", "The Big House", and "The Slammer".
C - Chore you hate: What are these "chores" you all speak of. I'm pretty much just taking it easy most of the time!
D - Dog's name: "Doggy".
E - Essential start your day item: My day always starts out with a little BM...no, not a bowel movement...where is your mind? I always start my day out with breast milk!
F - Favorite color: color? To be honest I don't even know what you are talking about!
G - Gold or Silver: Mmmmm?!?! Well, I have heard those commercials saying "cash for gold", so I'll take gold! I like that stuff called "cash". I would really like to stick it in my mouth, but Mommy and Daddy make me stick it in my piggy bank.
H - Height: I have heard that I have "short leg syndrome" just like my Mommy and Macy. I hear that is quite the bummer, but I like the length of my legs....it's easier to get my foot in my mouth :)
I - Instruments you play: Does getting into the kitchen cabinet and pounding on the tupperware count as an instrument?
J - Job title: Professional Persuader. Yep, I pretty much get what I want!
K - Kid(s): I keep trying to be a mommy to Macy's baby dolls...okay, so I just chew on their heads...but Macy keeps telling my they are HER babies. So I am asking that man named "Santa" to bring my one of my own for Christmas!
L - Living arrangements: I live at home with my mom, dad, sister, dog, cats, and fish, but I run the show!
M - Mom's name: "Ma-ma".
N - Nicknames: "Big Mac", "Macaroni", "Mac-a-docious," Why can't they call me princess or something?
O - Overnight hospital stay: I hear my big sister has stayed in the hospital for almost 80 nights, wow! Mommy says I have only stayed 2 nights! I think I like it that way!
P - Pet Peeve: When my sister tries to boss me around. Sometimes I give it right back to her!
Q - Quote from a movie: Usually when movies are on in my house, I am staring at the back of my eyelids.
R - Right or left handed: Both, I am what they call a double-fister. I am skilled at grabbing with both hands and stuffing!!!
S - Siblings: I am sure you all know Macy. Her presence is pretty hard to ignore :)
T - Right now I wake up at 1 am, 6 am, and 8 am. That is what happens when you are sick with a cold and getting your top teeth at the same time!
U- Underwear: What kind of question is this for a baby like me?!?!?!
V - Vegetable you dislike: Are those the things that Mommy and Daddy try to mix with yogurt so I can'r really taste it?
W - Ways/Reasons you run late: I NEVER run late! I also NEVER decide it would be a good idea to poop my pants when it's time to leave the house! Nope, NOT me!
X - X-rays you've had: This word is not in my baby dictionary, so I plead the 5th!
Y - Yummy food you make: Sometimes I pretend I am cooking special meals when I splash the dog water around. Mommy yells, "NO!", runs in like a crazy woman, and swoops me up! It's pretty entertaining!
Z - Zoo animals you like: Daddy calls me monkey sometimes, so those must be pretty cool zoo animals!

Food Fanatic Friday!!!
Crockpot Cheesy Potatoes

32 oz. Oreida cubed hashbrowns
8 oz. sour cream
1 can cream of chicken soup
8 oz. Velveeta cheese
1/2 stick (1/4 c. butter)
Combine all ingredients in a crockpot. Cook approximately 5 hours on low.
Have you noticed how easy my recipes are??? I love time saving recipes!!!
Have a great weekend! Jeremy and I have a date night planned, we are heading to Riley Hospital for the NICU reunion, and we have plans to do some homemade car washes!

Food Fanatic Friday
Want a really easy rice recipe that you can use as a great side to chicken, meatloaf, etc? Want a great rice recipe that you can eat alone for lunch?
Well, here it is!
I call this "Souped Up Minute Rice"

1 can cream of mushroom soup
1 can milk
1 can minute rice
Empty the contents of your can into a sauce pan. Fill the can with milk. Add milk to soup and mix. Heat slowly to a boil stirring frequently, so that sauce doesn't burn to the bottom. Once your sauce is starting to boil, remove from heat, add 1 can of rice to sauce and mix. Put a lid on the pan, and let sit for 10 minutes.
Eat and Enjoy!
