Food Fanatic Friday!!!

One time Jeremy washed my leftover mashed potatoes down the drain........I freaked! What do I do with those leftover mashed potatoes that would cause me to FREAK???

POTATO PATTIES!!!!

No, not hashbrowns, not twice baked potatoes, but POTATO PATTIES!!!

Here's how: (the ingredients depend on the amount of potatoes you have)

leftover mashed potatoes
1 egg white
1/8-1/4 cup parmesan cheese
3/4- 1 cup of shredded cheddar cheese
salt
pepper
bread crumbs


Mix the potatoes and egg white together. Add cheeses. Using a large cooking spoon, spoon that amount of potaotes into your hand, and lightly coat (And I mean lightly!) top and bottom with bread crumbs. Fry in oil on stove or griddle (medium/high) for 6-7 minutes each side. As you are frying, salt and pepper to taste. That light coating of breadcrumbs give the patties just the right amount of crispiness :)
