Anyway, for all of you who experience a change of seasons, you are probably planning your meals differently. My meal plan for each season changes. So here is a great, WARM meal....great for fall!
Tuna Noodle Casserole (You can substitute chicken for the tuna)

1 can tuna
2 boiled eggs (chopped)
1 cup peas (cooked)
4 T butter
2 T flour
2 cups milk
3/4 cup shredded cheese
1 cup bread crumbs ( I prefer Panko bread crumbs...they are crunchier)
2/3 cup macaroni (cooked) or 1 1/3 cup egg noodles (cooked)
Put tuna in 9x9 pan. Top with eggs and peas.
In a sauce pan, melt butter. Add flour and stir together. Add milk, and cook med/high heat until it starts to boil. Lower heat to thicken. Once it starts to thicken, add cheese. Continue to stir and cook until thick.
Add cooked macaroni to 9X9 dish. Pour sauce over all ingredients. Top with bread crumbs.
Bake at 400*-20 minutes. We like to have cresent rolls with our casserole :)
