Food Fanatic Friday...and other stuff!

Where have I been? I know...I've been missing in action. There is no excuse for not updating in over a week, but I am going to give it a try.

  • McKenna was sick for over 2 week with a sinus infection, other issues you may not want to know about, and pink eye.
  • McKenna has made 3 doctors visits in the last 2 weeks.
  • Macy became ill with bronchitis, but with the help of antibiotics, it only lasted 1 week.
  • Jeremy missed 2 days of work due to his eyes getting almost swollen shut from pink eye. He made 2 doctors visits in the last week. He is now on antibiotics from a sinus infection, and eye drops for pink eye.
  • I also got pink eye in both eyes, but I am not a doctor kind of person, so I just used Jeremy's eye drops. It has been a week now, and it is finally clearing up!
  • My mom came to town last Wednesday, and we cherished our time together before she left Saturday morning to return to Florida. My dad joined her on Friday afternoon, and we all headed out for our "last supper" before their journey.
  • My brother, who I have discovered is a fabulous actor, is currently performing in his first show. It is called Wit, and you can still see the show this weekend for its final viewing, in Indianapolis. We went on Friday night.
  • Last Saturday, with all of us feeling a little under the weather, we headed anyway to Macy's FIRST ballet class. She was stunning!!!!

Good news is, we are ALL feeling better now!!!! We have friends coming over Saturday night for a BBQ, and are so excited for Fall to finally arrive.

Since Fall is my FAVORITE season of the year, I have decided to give you a recipe of my all time favorite Fall recipe. I am sure you all have your own recipes for this dessert, but just give this one a try. It's not only easy, but the topping is FABULOUS!!!!!

Apple Crisp (or peach crisp)

In an 8 x 8 pan, layer your peeled and sliced apples (or peaches)

In a bowl, mix:

1 cup flour

1 1/2 cup sugar

3/4 t salt

1 t baking powder

Cut in: 1 egg, to make a crumb topping

Melt 1/3 cup butter, and drizzle over the topping

*Sprinkle with cinnamon

Bake at 350" 30-40 min. Enjoy!
